Apple Cinnamon Oatmeal Bars

  1. 1 1/2 cups of old fashioned oatmeal, uncooked

  2. 1/2 cup of chopped almonds

  3. 1/4 cup honey

  4. 1/2 tsp of cinnamon

  5. 1 granny smith apples, peeled, corded, and sliced

Spread oatmeal on a baking sheet and stick in the oven at 350°F until slightly golden brown. Once oatmeal is done pull out of the oven and place in bowl with chopped almonds, and cinnamon.  Place apple slices on a baking sheet with a wire rack, spray wire rack before placing apples. Put apples in the oven at 300°F for 2 1/2-3 hours or until dehydrated. When apples are done remove from oven and dice into small pieces and add to oatmeal mixture. Measure honey into a sauce pan over low/medium heat until liquid and easier to manage. Pour honey over oatmeal mixture and stir to combine. Spray a 9×9 inch glass baking dish with cooking spray and pour mixture into baking dish, pushing down until it is an even layer on the bottom. Place in fridge for 30 minutes or until stiff enough to cut into 8 bars, individually wrap and store in freezer.
