Balsamic Bruschetta Chicken

  1. 2 chicken breasts, cut in half

  2. 4 slices fresh mozzarella

  3. 1/4 cup diced red onion

  4. 1/2 cup diced roma tomatoes or quartered cherry tomatoes

  5. 1/3 cup finely chopped fresh basil

  6. 2 cloves minced garlic

  7. 1/4 cup balsamic glaze

  8. 1 tbsp olive oil

  9. 1 tsp salt

  10. 1/2 tsp pepper

In a bowl mix toegther salt, pepper and 1 tbsp of balsamic glaze. Coat all 4 pieces of chicken with the mixture. Coat a 9×13 baking dish with olive oil and place chicken in it. Pre-heat oven to 350º and bake chicken for 10 minutes. Mix together red onion, tomatoes, basil, and garlic. Remove chicken from the oven and evenly top each chicken breast with fresh mozarella, and tomato mixture. Put the chicken back into the oven for another 10 minutes or until chicken is fully cooked. Once chicken is plated drizzle the remaining 3 tbsp of balsamic glaze them.

*You can always make a balsamic glaze using 4 parts balsamic vinegar to 1 part brown sugar. For this recipe 1/2 cup of balsamic vinegar and 1 tbsp of brown sugar should be enough, but if you want more to save for other recipes you can do 2 cups of balsamic vinegar to 1/2 cup of brown sugar. Simmer over medium heat and reduce by half or until desired glaze consistency.
