Basil Pesto Pasta

  1. 1 chicken breast

  2. 1 – 16oz box of Penne or Rotini

  3. 1 – 8oz package of mushrooms, sliced

  4. 2 roma tomatoes, diced

  5. 2 tbsp olive oil

  6. pinch or salt and pepper

  7. 1/2 cup basil pesto (use my basil pesto recipe)

  8. 1/4 cup of parmesan

Fill a pot with water and set on high heat. Once boiling add a generous amount of salt and put in pasta. Heat a large frying pan on medium heat with olive oil. Cut up chicken into chunks and season with salt and pepper and put in frying pan. Once chicken is half way cooked add the mushrooms and tomatoes to the pan. Once the pasta is cooked strain and put in a bowl and add the cooked chicken, mushroom and tomato mixture to the bowl as well. Add 1/2 cup of basil pesto and stir until everything is coated. Serve with a sprinkle of parmesan and garlic toast.
