Beef & Cheese Enchiladas

1/2 lb lean ground beef
1/2 onion, diced
1/2 cup plain Greek yogurt
1/2 can corn
1 cup shredded cheddar cheese
4 flour tortillas (small size)
10 oz can enchilada sauce
15 oz can refried beans
Preheat oven to 350º. Brown beef in a pan on medium/high heat. Drain beef and add onion to pan and cook until onions are translucent. Once everything is cooked add the yogurt and corn into a pan and stir to combine. Spray your 9×13 baking dish with cooking spray. Divide mixture into 4 equal portions between 4 tortillas and place mixture near the edge of the tortilla and roll into a log. Do the same with the other 3 tortillas and fit them all into the baking dish. Cover the rolled tortillas with the enchilada sauce then sprinkle with shredded cheddar cheese. Bake in the oven for 15-20 minutes or until cheese is melted.
