Black Bean Soup


  1. 3 cans of black beans, rinsed

  2. 1 large onion, diced

  3. 1 large red bell pepper, seeded and diced

  4. 1 stalk of celery

  5. 2 cloves garlic, finely chopped

  6. 1 tsp ground cumin

  7. 1 tsp ground chipotle pepper

  8. 2 Tbsp cilantro

  9. 1 1/2 tsp salt

  10. juice from 1 lime

  11. 2 cups of chicken stock

  12. 1/2 ripe avocado, chopped (optional)

In a large pot fry onions, bell, celery and garlic on medium heat. Once onions are translucent and everything seems cooked add the cumin, chipotle pepper, cilantro, and lime juice. Stir in spiced then add rinsed black beans into the pot. Let everything simmer together for 5 minutes then take half of the mixture and put it into the food processor. Blender mixture until smooth then add 2 cups of chicken stock and blend again. Once thoroughly combined add smooth mixture back into the pot with the other half. Stir to combine and simmer for 20 minutes. Serve with chopped avocado on top.
