I've been on a smoothie kick lately as part of me trying to get healthier. I've been trying to have a smoothie for breakfast at least a few days a week. No protein powders or weird additives just fruit and real ingredients. I normally try to stay away from dairy but adding cottage cheese to this smoothie gives it a creamy cheesecake taste that it so delicious. I've tried a few different variations with different fruits like peach or mixed berry. The blueberry is by far my favourite. I'm sure if I could get my hands on some frozen cherries it would be my new favourite, but until then this one is definitely staying in my weekly rotation.
Of course every time I get out the blender the kids come running begging for some. If you have children that you know love smoothies make sure to double the recipe.
I told the kids it was blueberry cheesecake and all I hear from them is, "that doesn't look like blueberry cheesecake."
It definitely didn't stop them from wanting to steal mine. If you try this recipe or come up with another fruit variation that you love let me know. Happy smoothie making!
Blue Berry Cheesecake Smoothie
1/2 cup frozen blue berries
1/2 cup cottage cheese
1 cup coconut milk or almond milk
1 tsp vanilla extract
2 tbsp honey
15 ice cubes
Add ingredients to blender and blend until combined. Add softest ingredients closest to the blades and ice and frozen fruit farthest from the blades for easier blending.
