Brownie Mug Cake

Sometimes after dinner once the kids are in bed and I'm alone in the kitchen doing up the dishes I like to make myself something sweet. As a mom I'm so accustomed to having to share everything with my boys. If they even hear a package crinkle they are in the kitchen asking what I have.

Some times you just need to wait until they are in bed, and the house it quiet, to enjoy a little something just for yourself.

Something just for me that's quick and easy that I don't have to share. I love recipes that a quick and still so yummy. Anything chocolate is definitely a favourite for my. This brownie mug cake is so gooey and fudgy it will become one of your favourite go to desserts too.

Brownie Mug Cake

  • 1/4 cup and 2 tbsp all purpose flour

  • 1/4 cup and 2 tbsp sugar

  • 1/4 cup and 2 tbsp Cocoa Powder

  • 3 tbsp butter or flavorless oil

  • 3 tbsp water

  • pinch of salt

  • 1/2 tsp vanilla extract

  • 2 tsp chocolate chips (optional)

  • Sprinkle with powdered sugar (optional)

Melt butter in mug for 20 seconds, skip this step if using oil. Add sugar, water and vanilla to the melted butter and stir until combined. Add in the remaining dry ingredients and stir until combined. Batter should be fairly thick in consistency, add an extra tbsp of flour if batter is to thin. Stir in chocolate chips if using them. Place mug in the microwave and cook in high for 1 minute. If it doesn't look fully cooked put back into the microwave in 10 second increments until cooked. Let cool for 5 minutes and sprinkle with powdered sugar for garnish.
