Bruschetta Egg White Omelette

  1. 2 eggs, separated whites only

  2. 1/2 tsp of dried basil

  3. salt and pepper to taste

  4. 1/5 cup of baby spinach

  5. 1/3 cup grape tomatoes, cut in half

  6. 1 tbsp crumbled feta cheese

  7. 1 tbsp water

Heat up a small skillet to medium heat. In a bowl add the egg whites, basil, salt and pepper. Whisk together until eggs are slightly frothy. Spray pan with cooking spray and add eggs to hot pan. Let the bottom of the eggs cook and flip once. Add the spinach and tomatoes on to half of the eggs. Add 1 tbsp of water to the pan and cover with lid to steam the vegetables. Let cook until spinach is wilted. Sprinkle on feta and fold the egg over top of the tomato and spinach mixture. Serve with your choice of bread.

Serves 1

* I chose to use only the egg whites but you can use the whole egg.
