Buffalo Chicken Stuffed Sweet Potato

I used to have a terrible aversion to sweet potatoes. The thought of eating something sweet mixed in with my savory dinner items completely turned me off. It wasn't until after I got pregnant that I actually started to love them. Now sweet potatoes are pretty much the only potatoes we eat. This recipe is the perfect blend of sweet and heat. Add the blue cheese dressing and this is so incredibly delicious. The combination seems odd but it totally works. If you try out this recipe let me know what you think.

Buffalo Chicken Stuffed Sweet Potato

  • 4- 6 sweet potatoes

  • 2 tbsp olive oil

  • 3 chicken breasts

  • 1 cup chicken stock

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup butter

  • 1/2 to 3/4 cup of hot sauce

  • blue cheese dressing (or ranch dressing)

  • blue cheese crumbles (garnish)

Season chicken breasts with salt and pepper and place in a layer in the bottom of the crock pot. Pour in 1 cup of chicken stock to keep chicken moist during cooking. Cook in crock pot on low for 6-8 hours or on high for 3-4 hours. Poke sweet potatoes with a fork, coat them with olive oil and place them on a baking tray. Bake potatoes in oven at 400ºF for 35-40 minutes. Once chicken is cooked drain any excess liquid and shred chicken with a fork. Add the butter and hot sauce and stir until butter is melted. Add more hot sauce as necessary to evenly coat the chicken. When ready to serve cut sweet potatoes in half and fill with buffalo chicken mixture, top with blue cheese dressing and blue cheese crumbles.
