Carb-Free/Keto Cinnamon Raisin Bagels

I really wanted to play with the recipe for Carb-Free/Keto Everything Bagels. My husband said he didn't think it would work because you can taste the cheese and it pairs better with a savory recipe. In my mind mozzarella and cream cheese are fairly mild so I figured if I added cinnamon and some sugar it would work. You can't even tell. These are not overly sweet, which I prefer, but I know the kids would have been happy if they were a little sweeter. Make sure to see the note at the bottom if you want to make them sweeter. These turned out so good, I'll definitely be making them all the time. I chose to use stevia because it's a no calorie sweeter, but you can use whatever sweetener or sugar you want. Enjoy!

Carb-Free/Keto Cinnamon Raisin Bagels

  • 2oz low fat cream cheese

  • 3 cups mozzarella cheese

  • 2 eggs

  • 2 cups almond flour

  • 1 tbsp baking powder

  • 1/2 cup raisins, soaked in warm water for 10 minutes (drain water)

  • 2 tbsp ground cinnamon

  • 2 tbsp sugar (I used Stevia)

  • cooking spray

Pre-heat oven to 400°. In a microwave safe bowl melt together the mozzarella and cream cheese. Melt on high in microwave at 30 second increments and stir it to combine together. Once cheese is melted remove from the microwave and set aside. In another bowl whisk together 2 egg and add to the cheese mixture. Measure out almond flour, baking powder, sugar, and cinnamon and add to them to the cheese mixture. Be careful is case the cheese is still hot but use your hands and combine everything together, make sure to drain the water from the raisins and then fold them into the dough. Divide dough into 8 equal pieces and form into bagel shapes. Spray a baking sheet with cooking spray and arrange bagels onto the baking sheet. Bake in oven for 20 minutes.


*8 Servings

*Note: These aren't incredibly sweet but I liked them like that. If you want them sweeter add a 1/4 cup of sugar.
