I have been on my health journey for over a year now. During that time I have learned so much about my body and how it reacts to different food. I have tried so many diets. Paleo, whole 30, carb-free, dairy-free, sugar-free, and even vegetarian for a bit. I'm not saying there is anything wrong with any of these if it is what makes you and you body happy. Long story short I have noticed a huge difference in energy and bloat when I stay away from carbs. I will get further into that in another blog about my health journey, but basically I wanted a carb free option for bread that was high in protein and this is it. These bagels are so good, and they hold up amazing when sliced and toasted. Even my husband and kids like them. You won't feel like your missing out on bread at all.
Carb-Free/Keto Everything Bagels
2oz low fat cream cheese
3 cups mozzarella cheese
3 eggs, reserve 1 egg for brushing tops of bagels
2 cups almond flour
1 tbsp baking powder
2 tbsp minced dry onion
3 tbsp everything bagel seasoning
Pre-heat oven to 400°. In a microwave safe bowl melt together the mozzarella and cream cheese. Melt on high in microwave at 30 second increments and stir it to combine together. Once cheese is melted remove from the microwave and set aside. In another bowl whisk together 2 eggs and add to the cheese mixture. Measure out almond flour, baking powder, and minced dry onion and add to them to the cheese mixture. Be careful is case the cheese is still hot, but use your hands and combine everything together. Divide dough into 8 equal pieces and form into bagel shapes. Spray a baking sheet with cooking spray and arrange bagels onto the baking sheet. Whisk the remaining egg and brush on the top of each bagel and sprinkle with everything bagel seasoning. Bake in oven for 20 minutes.
