Cauliflower “Mac” & Cheese

1 head of cauliflower cut into bite sized pieces
1/4 cup butter
1/3 cup flour
1/4 tsp paprika
1/4 tsp dry mustard
1/8 tsp ground nutmeg
3/4 cup heavy cream
1 cup milk
9oz shedded sharp cheddar
1 tsp salt
1/2 tsp pepper
Pre-heat oven to 350º. In a sauce over medium heat melt butter. Add flour, paprika, dry mustard, nutmeg, salt, and pepper to make a roux. Cook for 2 minutes and add cream and milk and whisk it together. Simmer until sauce thickens. Turn heat to low and add cheese, reserving 1/2 cup of cheese. In and bowl mix together the cauliflower and cheese sauce, once everything is coated transfer to a baking or casserole dish. Sprinkle remaining 1/2 cup of cheese on the top. Bake for 40 minutes or until cauliflower is fork tender.
