1 1/2 cups of old fashioned oatmeal, uncooked
1/2 cup of chopped pecans (or almonds)
1/4 cup honey
1/3 cup dried cranberries
1/2 cup white chocolate chips
Spread oatmeal on a baking sheet and stick in the oven at 350°F until slightly golden brown. Once oatmeal is done pull out of the oven and place in bowl with chopped pecans, and cranberries. Measure honey and 1/4 cup of white chocolate chips into a sauce pan over low/medium heat until chocolate melts. Pour honey over oatmeal mixture and stir to combine. Spray a 9×9 inch glass baking dish with cooking spray and pour mixture into baking dish, pushing down until it is an even layer on the bottom. Sprinkle remaining 1/4 cup of white chocolate chips on top, push gently so they stay on top and melt in a little bit. Cover baking dish and set into the fridge for 30 minutes or until stiff enough to cut into 8 bars, individually wrap and store in freezer.
