Creamy Tomato Bacon Pasta

Pasta is a huge family favourite. This kids love it. Unfortunately, or maybe fortunately depending on how you look at it, my husband doesn't like tomato sauces. Which means that I'm always trying to find a new twist to my pasta recipes. In the summer months when I have an abundance of fresh basil from the garden I tend to make a lot of pesto. We use it pasta, as sandwich spread, or even as sauce on homemade pizza. In the winter months though when I don't have many fresh herbs around a cream sauce is my go to. If you've never tried making cream sauce from scratch you are totally missing out. This pasta is so creamy and full of flavour, your family is sure to love it.


Creamy Tomato Bacon Pasta

  • 1 pkg turkey Italian sausage, partly frozen and cut into medallions

  • 1/2 pkg bacon, diced

  • 1 - 12oz pkg penne pasta

  • 1 can of diced tomatoes

  • 1 pkg baby portobello mushrooms, sliced

  • 1 - 8oz pkg spinach

  • 5 cloves garlic, minced

  • 2 cups heavy cream

  • 1 cup shredded parmesan cheese

  • 1/4 - 1/3 cup of flour

  • 1 tsp salt

  • 1/2 tsp pepper

Heat pan on medium heat and cook sausage medallions for 10-15 minutes, once cooked side aside in a large bowl. Heat a pot of boiling water on high heat until water boils. Add pasta to boiling water and boil for 15-20 minutes or until pasta is tender. Once pasta is cooked drain and set it aside with sausage. In same pan that sausage was cooked in add mushrooms and spinach on medium heat. Cook until spinach is wilted and mushrooms are softened. Set spinach and mushrooms aside with sausage and pasta. Add bacon to pan and cook until crispy. Set aside bacon with sausage, mushrooms, spinach, and pasta but retain the bacon grease in the pan. Add garlic to bacon grease and cook until softened then add flour, salt and pepper. Whisk the flour roux until combined and cook for 1 to 2 minutes. Add the heavy cream to the pan and whisk until the sauce thickens. Turn heat to low and whisk in parmesan cheese and can of diced tomatoes into the sauce. Once sauce is thickened add it to the bowl with the pasta, sausage, bacon, mushrooms, and spinach. Stir until everything is coated in sauce. Top with extra parmesan and parsley for garnish.
