1 avocado, cut in half, peeled and pitted
1/2 tomato, diced
1/4 cup red onion, diced
1/4 cup shedded cheddar cheese
salt & pepper, to taste
Heat pan to medium heat and spray with cooking spray, saute onion and side aside. Place avocado halves in pan and crack eggs into avocado halves being sure to place the yolk of the egg in the hole where pit was removed. Season with salt and pepper to taste. Once egg white is slightly cooked around the edges pour 1/4 cup water into the pan and cover. The steam will cook the rest of the egg. For fully cooked egg whites may take up to 5-7 minutes. Once egg is cooked top with tomatoes, red onion and cheese. Cover and cook for 1 more minute or until cheese is melted. Serve with toast.
