Garlic Hummus


  1. 2 cans of chickpeas, drained

  2. 4 cloves garlic, minced

  3. 1 1/2 tsp kosher salt (or to taste)

  4. 1 freshly squeezed lemon

  5. 1/4 cup water

  6. 1/3 cup tahini, stirred well

  7. 1/4 cup extra-virgin olive oil, plus extra for serving

Blend chickpeas, garlic, salt, and lemon juice in the food processor for 15 – 20 seconds. Scrap down the sides of the bowl and add water and blend again for another 15 20 seconds. Scrap down the sides again and add tahini. Blend again and continue scraping down the sides of the bowl between blending sessions. Drizzle in olive oil through spout while food processor is running. Continue blending until hummus is smooth.

*Serve with favourite vegetables or pita chips
