As I child I always loved jalapeno poppers. They were a beautiful combination of spicy and creamy. I thought this recipe was a wonderful twist on one my childhood favourite appetizers. Even with the creamy aspect this chicken recipe might be just a little to spicy for children. My boys love it but not all children like spicy food. Jalapeno Popper Chicken
3 chicken breasts, cut in half to make 6 equal pieces
1- 8oz package of cream cheese, room temperature and cut into cubes
6 jalapenos, halved and seeded
1 cup shredded cheddar cheese
1 tsp salt
1/2 tsp pepper
1 tbsp olive oil
Preheat oven to 350ºF. Season both sides of chicken with salt and pepper. Coat a 9x13 baking dish with olive oil and and arrange chicken in bottom of dish. Spread the cream cheese on the top side of the chicken breasts. Place 2 jalapeno halves on each of the chicken breasts and sprinkle each one with cheddar cheese. Put baking dish in the oven and bake for 25-30 minutes or until fully cooked. Serve with steamed rice or your choice of vegetable.
