Low Fat Chicken Salad


  1. 2 – 12.5oz cans of chicken breast

  2. 1/2 of granny smith apple, diced

  3. 1 cup green grapes, cut in half

  4. 1/2 of red onion, diced

  5. 1/3 cup of dried cranberries

  6. 1/3 cup of slivered almonds

  7. 1/2 cup of low fat plain Greek yogurt

  8. 1 tbsp lemon juice

  9. 1 tsp garlic powder

  10. 1/2 tsp salt

  11. 1/2 tsp pepper

Put chicken breast in a bowl and break it up with a fork. Add remaining ingredients and stir to combine. Serve on your choice of bread or bun.

Serves 6

* Can be tweaked to your liking. I like more apple, almonds, grapes, and cranberries in mine. Can also tweak it using less chicken so it doesn’t make as many serving. I would think you could get roughly 2 servings out of a 4.5oz can of chicken
