1/2 of cooked Garlic And Rosemary Pork Loin, cubed
1 package Stir Fry Medley vegetables
1/2 cup coconut milk
1/2 cup crushed pineapple, canned or freshly blended
juice from one lime
2 cups of brown rice
In a small pot add 5 cups of water and heat on high until it boils. Add brown rice and reduce heat to low and cover. Allow to cook for 20 minutes or until liquid is absorbed and rice is done. Heat a large skillet to medium heat. Once skillet is heated combine coconut milk, pineapple and lime juice. Simmer for 3 min,then add the stir fry vegetable medley, mix well and cook 7 min or until vegetables are crisp tender. Stir in cubed pork and heat through.
