Pineapple Pulled Pork Sandwich with Green Apple Slaw

  1. 1 – 3 to 4 lb pork butt

  2. 1 – 20oz can of crushed pineapple

  3. 1/2 cup of water

  4. 1/2 cup of honey BBQ sauce

  5. 3 granny smith apples, cut into matchsticks

  6. 1/4 cup of red onion, diced

  7. 1/4 cup of mayo

  8. 1 tsp of mustard

  9. 1 tsp of celery seed

  10. salt and pepper

Season pork butt with salt and pepper and put in crock pot with can of crushed pineapple and water. Cook on high for 4 to 5 hours. Once cooked shred the pork and drain the liquid keeping the pineapple. Put the pork, pineapple and BBQ sauce back in the crock pot mix and let cook for 30 minutes on low.

In a bowl put the apples and red onion. For the dressing, in separate bowl, mix together the mayo, mustard, celery seed, salt and pepper and pour dressing over the apples and onion and mix until coated. Serve on a Hawaiian, brioche or pretzel bun.
