Pineapple Sage & Honey Lemon Chicken Thighs

I recently went grocery shopping and some yummy summertime salad dressings made there way into my cart. The warm weather in Atlanta has me craving fresh fruits, vegetables, and herbs, and lighting up the grill. I threw together this chicken recipe to go with a delicious summer berry salad with white balsamic peach vinaigrette dressing. I wanted to use some fresh herbs from the garden and keep it light and slightly sweet. If you give this recipe a try leave a comment and like and let me know what you think.

Pineapple Sage & Honey Lemon Chicken Thighs

  • 4 skinless chicken thighs

  • 3 tbsp olive oil

  • 3 tbsp honey

  • 3 tbsp pineapple sage, minced

  • 3 tbsp sweet mint, minced

  • lemon zest from half a lemon

  • juice from half a lemon

  • 1 tsp salt

  • 1/2 tsp pepper

Pre-heat oven to 350°F. In a bowl whisk together oil, honey, pineapple sage, mint, lemon zest, lemon juice, salt, and pepper. Coat each chicken thigh in herb and honey mixture and put in a baking dish. Bake in oven for 20 to 30 minutes, or until thermometer reads 165°F. Serve with your choice of side.
