4 portabella mushrooms, stems removed
1 tsp minced garlic
1 Tbsp olive oil
2 tsp thyme
slices of cheese
4 whole grain rolls
In a bowl mix garlic, olive oil, and thyme. Dip mushroom caps into mixture to coat. Slice up onion and fry on low/medium heat until caramelized then set aside. In the same pan fry the mushrooms caps. Once mushrooms and cooked place on a baking sheet and top with your choice of cheese. Stick in the oven on broil until cheese is melted. Toast buns in the oven until slightly browned then remove and spread both halves with hummus. Place mushroom caps on bottom half of bun then top with caramelized onions, spinach and bun tops.
