This recipe has become one of my favourites and it's actually very quick and easy to make. It is full of fresh flavours for summer. I typically make gyros with my Greek herb rubbed chicken breasts, but making these with pork gave it a bit of a different spin. Adding the sweet chili sauce to these sounds weird but it added another layer of flavour that makes this Gyro recipes just a little different, but so delicious. Pulled Pork Gyro's with Sweet Chili and Tzatziki Sauce
Pulled Pork Ingredients:
2 - 1 1/2 lb pork tenderloins
1 tbsp dried basil
1 tsp dried oregano
1 tsp dried thyme
1 tbsp dried dill weed
4 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
2 tbsp olive oil
1/2 cup water
In a small bowl mix together the basil, oregano, thyme, dill, salt, pepper and garlic. Coat pork tenderloins with olive oil and rub with herb rub. Put pork loins in crock pot with water and cook on high for 2 hours. Once cooked pull pork using a fork.
1 1/2 cups Greek yogurt
2 tbsp dried dill weed
1/2 English cucumber, grated and juice squeezed out
juice from 1/2 lemon
1 tsp salt
Mix all ingredients in a bowl and store in refrigerator until ready to assemble and serve.
1 1/2 cups cherry tomatoes, halved
2 cups romaine lettuce, chopped
1/2 red onion, chopped
1/2 English cucumber, sliced and halved
4-8 pita breads
prepared sweet chili sauce (can be found in Asian aisle in grocery store)
To assemble gyros place pulled pork on pita bread and drizzle a little sweet chili sauce over meat. Top with romaine lettuce, cherry tomatoes, and red onion. Add a tbsp or 2 of tzatziki and your ready to eat.
