9 oz pkg 3 cheese tortellini
1 cup chopped asparagus
1/4 cup sliced sun-dried tomatoes, diced
1 tomato, chopped
1/3 cup sun-dried tomato vinaigrette (or alternative vinaigrette)
grated parmesan to taste
Fill a large pot with water and put on high heat until it boils. Once it boils add tortellini and asparagus. Boil until pasta is cooked and asparagus is tender. Drain and pour into a large bowl. Add sun-dried tomatoes, chopped tomatoes, and vinaigrette. Toss all ingredients together. Serve with grated parmesan in top.
* I substituted the sun-dried tomato vinaigrette with roasted red pepper and it still tasted delicious.
